  • 3 eggs
  • 1 c. sugar
  • 1 tsp. fresh lemon juice
  • 2/3 c. pumpkin
  • 3/4 c. flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 c. chopped walnuts or pecans
  • powdered sugar

    Grease jelly roll pan and line with parchment paper.

    Preheat oven to 375°.

    Beat eggs 5 minutes at high speed.

    Add sugar, lemon juice and pumpkin.

    Sift flour, baking powder, spices and salt.

    Fold into egg mixture.

    Pour batter into prepared pan and top with nuts. Bake 15 minutes at 375°.

    Turn immediately onto a clean linen towel that has been sprinkled lightly with powdered sugar.

    Roll lengthwise in the towel and cool.
