- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1/2 tsp. nutmeg
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
Directions

1Mix eggs alone for 1 minute.

2Slowly add sugar; beat on low for 4 minutes.

3Add pumpkin; scrape bowl well.

4Combine all dry ingredients and add to pumpkin mixture, mix for 1 minute.

5Line jelly roll pan (cookie sheet) with waxed paper and grease the paper generously.

6Pour mix into pan and bake 12 to 15 minutes at 375°. Turn cake onto towel that has been sprinkled with confectioners sugar; remove wax paper.

7Roll cake and towel up together.

8Cool completely.
