- 3 eggs
- 2/3 c. canned pumpkin
- 3/4 c. flour
- 1 c. sugar
- 1 tsp. baking soda
- 1 tsp. cinnamon
Directions

1Beat eggs for 5 minutes.

2Add all other ingredients and mix well.

3Grease and flour jelly roll pan or large cookie sheet. Pour batter on cookie sheet and spread evenly.

4Sprinkle with chopped nuts, if you want.

5Bake at 375° for 15 minutes.

6Place on a clean tea towel and roll up into a roll.

7Let cool.

8Unroll, fill with filling (recipe to follow).

9Reroll and refrigerate.
