Ingredients
- 2 medium onions, chopped
- 2 tablespoons butter
- 2 (14 1/2 ounce) cans chicken broth
- 2 lbs pumpkin, peeled and cut into cubes
- 1 teaspoon salt
- 14 teaspoon black pepper
- 1 cup milk
- 1 cup water
Directions

1In a deep pot, saute the onion in butter over medium heat until golden.

2Add chicken broth, water, pumpkin cubes, salt and pepper.

3Bring to a boil.

4Reduce heat and simmer about 20 minutes, or until the pumpkin cubes are soft.

5Remove from heat and puree the mixture in a blender/food processor.

6Return to the saucepan.

7Add the milk to the puree and bring to a boil over medium heat.

8Adjust seasonings to taste.

9Serve and enjoy!
