Ingredients
- 1 yellow onion, finely chopped
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 (2 lb.) can pumpkin
- 5 c. chicken broth
- 1/4 c. white vermouth (optional)
- 1 tsp. salt
- 1/2 tsp. ginger
- 1/4 tsp. nutmeg
- 2 egg yolks
- 1 c. whipping cream
Directions

1Saute onion in butter for 3 minutes, until softened.

2Stir in flour.

3Add pumpkin, mashing it into a puree.

4Add chicken broth, vermouth and salt.

5Cover and simmer 15 minutes.

6Add ginger and nutmeg.

7Combine egg yolks and heavy cream.

8Stir into soup.

9Heat until hot but not boiling.
