Pumpkin Soup

Ingredients

  • 1 1/2 lb. pumpkin (known as butternut squash in USA)
  • 2 large onions
  • 8 oz. potatoes
  • 1 chicken stock cube
  • 4 c. water
  • 1 c. cream
  • salt and pepper

Directions

    Peel pumpkin; cut into small pieces.

    Put in a large saucepan. Add sliced onions, chopped potatoes, crumbled stock cube and water.

    Bring to a boil, reduce heat and simmer uncovered 25 minutes, until soft.

    Push through sieve or blender.

    Return puree to saucepan.

    Add cream, salt and pepper and reheat.

    Simmer 5 minutes.

    Serves 6.
