- 1 1/2 lb. pumpkin (known as butternut squash in USA)
- 2 large onions
- 8 oz. potatoes
- 1 chicken stock cube
- 4 c. water
- 1 c. cream
- salt and pepper
Directions

1Peel pumpkin; cut into small pieces.

2Put in a large saucepan. Add sliced onions, chopped potatoes, crumbled stock cube and water.

3Bring to a boil, reduce heat and simmer uncovered 25 minutes, until soft.

4Push through sieve or blender.

5Return puree to saucepan.

6Add cream, salt and pepper and reheat.

7Simmer 5 minutes.

8Serves 6.
