Pumpkin Walnut Cake

  • 3 c. sifted flour
  • 2 tsp. baking powder
  • 2 tsp. soda
  • 1 tsp. salt
  • 3 1/2 tsp. cinnamon
  • 4 large eggs
  • 1 1/2 c. corn oil
  • 1 c. pumpkin (1 lb.)
  • 1 c. walnuts, coarsely chopped

Directions

    Beat eggs until lemon color; add oil.

    Sift dry ingredients together and add, alternately with the pumpkin, on low speed. Stir in walnuts.

    Bake in ungreased tube pan for 1 hour and 10 minutes at 350°.

    Check after 1 hour.

    Completely cool before removing cake from pan.
