Ingredients
- 1 2-pound head cauliflower
- 1 cup milk
- Salt to taste
- 2 tablespoons butter
- 18 teaspoon freshly grated nutmeg
- Freshly ground pepper to taste
Directions

1Break cauliflower into florets.

2Add them to a kettle with cold water to cover.

3Add 1/4 cup milk.

4Add salt.

5Bring to a boil and simmer for 15 minutes, or until tender.

6Drain well.

7Put pieces, a few at a time, into the container of a food processor.

8Blend to a puree.

9Or put cauliflower through a food mill or ricer.

10Spoon puree into a saucepan.

11Heat remaining milk and add it to saucepan.

12Add butter, nutmeg and pepper.

13Blend well.

14Check for seasonings.

15Serve hot.
