- 6 quail
- 1/4 c. butter
- 1/4 c. chopped onion
- 1/4 c. chopped celery
- salt and pepper
- 1 Tbsp. cornstarch
- 1 c. chicken bouillon
- 1/4 c. cooking sherry
- 1 Tbsp. parsley
Directions

1Saute quail in butter for 10 minutes; remove quail.

2Add onion and celery to butter and cook 5 minutes over medium heat. Dissolve cornstarch in bouillon; stir into onion-celery mixture and cook until thickened.

3Stir in sherry and parsley.

4Salt and pepper to taste.

5Arrange quail in shallow pan.

6Cover with sauce and bake at 350° for 1 hour or until tender.

7Serves 6.
