Turkey Fried Rice

Ingredients

  • 2/3 lb basmati rice
  • 2 tbsp olive oil
  • 1 lb turkey breast
  • 2 None leeks, sliced into rings
  • 3 None carrots, peeled and sliced diagonally in slices
  • 6 None eggs
  • 6 tbsp soy sauce
  • 1-2 tbsp red chili paste (sambal oelek)

    Cook the rice according to the package instructions. Drain thoroughly and rinse with cold water.

    Heat the oil in a large nonstick frying pan. Fry the turkey over high heat for 3-4 mins on each side. Remove from heat and slice. Fry the leeks and carrots in the hot oil over a medium heat for 3-4 mins. Whisk the eggs and soy sauce and pour the mixture into the pan. Cook for about 2 mins, then stir in the red chili paste. Fold in the rice and turkey slices and cook for 2-3 mins, season to taste.
