- 8 quail
- 1/3 c. butter
- 1 onion, sliced
- 1 leek, sliced
- 2 sweet peppers, sliced
- 6 strips bacon, diced
- chicken stock
- 1 1/3 c. rice
- salt and pepper
- 3 tomatoes, chopped
- chicken stock
- 1/2 c. Parmesan cheese
- bunch of parsley, minced
Directions

1Saute the onion in butter; add leek, green pepper and bacon. Cook until tender.

2Stuff quail with mixture and place in a heavy, tightly covered pot and cook until tender.

3Add rice, salt, pepper and tomato; stir.

4Add stock to make approximately 2 2/3 cups liquid.
