- 500 g. raisins
- 100 ml. rum
- 500 g. flour
- 1 Tbsp. baking powder
- 1 Tbsp. vanilla
- pinch of salt
- 4 drops almond extract
- 1 pinch ground cloves
- 150 g. diced candied lemon peel
- 100 g. diced candied orange peel
- 1 pinch cardamon
- 1 pinch ginger
- 1 pinch nutmeg
- 1 pinch cinnamon
- grated orange peel
- 2 eggs
- 175 g. soft unsalted butter
- 250 g. Quark
- 250 g. ground almonds
Directions

1Soak raisins in rum in jar overnight.

2Mix together other ingredients.

3Knead with mixer.

4Turn out and work by kneading on surface.

5Add the raisins and keep kneading until smooth dough. Shape into loaf.

6Put on baking sheet lined with greaseproof paper.

7Bake at 160° to 180° C. for 50 to 60 minutes.

8Brush with 100 g. melted butter and 50 g. icing sugar when stollen is removed from oven.
