Ingredients

  • 500 g. raisins
  • 100 ml. rum
  • 500 g. flour
  • 1 Tbsp. baking powder
  • 1 Tbsp. vanilla
  • pinch of salt
  • 4 drops almond extract
  • 1 pinch ground cloves
  • 150 g. diced candied lemon peel
  • 100 g. diced candied orange peel
  • 1 pinch cardamon
  • 1 pinch ginger
  • 1 pinch nutmeg
  • 1 pinch cinnamon
  • grated orange peel
  • 2 eggs
  • 175 g. soft unsalted butter
  • 250 g. Quark
  • 250 g. ground almonds

Directions

    Soak raisins in rum in jar overnight.

    Mix together other ingredients.

    Knead with mixer.

    Turn out and work by kneading on surface.

    Add the raisins and keep kneading until smooth dough. Shape into loaf.

    Put on baking sheet lined with greaseproof paper.

    Bake at 160° to 180° C. for 50 to 60 minutes.

    Brush with 100 g. melted butter and 50 g. icing sugar when stollen is removed from oven.
