- 1 1/2 cups self-rising flour
- 2/3 cup granulated sugar
- 8 tbsp (1 stick) butter, at room temperature
- 3 None eggs
- 1/4 cup milk
- 2 tbsp currants
- None None Powdered sugar, to dust
Directions

1Preheat the oven to 350°F. Line two 12-cup muffin pans with paper liners.

2Sift flour into a medium bowl. Add sugar, butter, eggs and milk. Beat with an electric beater on medium speed for 3 mins until smooth and pale. Stir in currants. Spoon into muffin cups.

3Bake, 15 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Dust with powdered sugar to serve.
