  • 1 pint bread crumbs
  • 2 tablespoons melted butter
  • 1 cup sugar
  • 1 quart milk
  • 3 eggs separated
  • 1 teaspoon lemon extract
  • jelly or jam
  • 4 tablespoons sugar

Directions

    Soak crumbs in milk for 1/2 hour. Beat yolks of eggs with sugar until yellow. Add lemon extract and butter. Pour into baking dish and bake 1/2 hour. When done spread a layer of jam or jelly over top.

    Beat egg whites stiff. Add sugar and spread over pudding. Brown lightly in moderate oven and serve.
