  • 7 ounces Mexican blend cheese
  • 1 chile, fresno (optional)
  • 8 flour tortillas, 6-inch across
  • onion relish or salsa, to serve

Directions

    cut off the stem and deseed the chile,cut the flesh into 8 thin strips.

    warm a large frying pan or griddle.place one tortilla on the pan or griddle at a time,sprinkle cheese on one half and add a strip of chile,fold the tortilla over the cheese and press the edges together gently to seal,cook the filled tortilla for 1 min,then turn over and cook the other side for 1 minute.

    remove from the pan,cut it into 3 triangles or 4 strips,serve immediately with onion relish or tomato salsa.
