Ingredients

  • 2 handfuls Chicken or Turkey
  • 2 Tortillas
  • 1 Red Onion
  • 1 Red Chilli
  • 1 handful Cheese of choice
  • 1 handful Coriander
  • 1 pinch Salt and Pepper

Directions

    Shred the turkey and place on a tortilla.

    Chop the onion and chilli and sprinkle over tortilla.

    Place chunks of cheese onto the tortilla.
  4. 4
    Rip some coriander and sprinkle on top of tortilla.

    Season with salt and pepper.

    Place another tortilla on top.

    Cook the quesadilla in a griddle pan or frying pan over a medium heat giving it about 2-3 minutes on each side.

    Remove from the pan, cut into quarters and serve.
