Ingredients
- 2 handfuls Chicken or Turkey
- 2 Tortillas
- 1 Red Onion
- 1 Red Chilli
- 1 handful Cheese of choice
- 1 handful Coriander
- 1 pinch Salt and Pepper
Directions

1Shred the turkey and place on a tortilla.

2Chop the onion and chilli and sprinkle over tortilla.

3Place chunks of cheese onto the tortilla.

4Rip some coriander and sprinkle on top of tortilla.

5Season with salt and pepper.

6Place another tortilla on top.

7Cook the quesadilla in a griddle pan or frying pan over a medium heat giving it about 2-3 minutes on each side.

8Remove from the pan, cut into quarters and serve.
