Ingredients

  • 1/2 packages 14 Oz Package Chorizo (Pork Or Beef)
  • 1/2 cups Cup Fresh Poblano Pepper, Seeded And Sliced In 1/2 Inch Strips
  • 1/2 cups Cup White Onion, Sliced In 1/2 Inch Strips
  • 1/2 cups Cup Of Tequila
  • 1 package (15 Oz. Size) Queso Quesadilla Cheese, Shredded
  • 1/4 cups Cup Finely Chopped Tomato
  • 1 Tablespoon Chopped Fresh Cilantro

Directions

    Preheat oven to 350F.

    In an oven proof skillet, cook the chorizo until almost done.

    Drain well.

    Add the poblano and onion and cook until tender.

    Completely remove pan from heat.

    Carefully add tequila.

    Return to heat and simmer uncovered for 15 to 20 seconds or until most of the tequila has dissipated.

    Stir in cheese.

    Bake uncovered for 15 minutes or until cheese is completely melted and slightly golden brown on top.

    Sprinkle with tomatoes and cilantro.

    Serve with tortilla chips.

    Note: If you double the recipe, do not double the tequila.
