- 9-inch deep pie shells
- 4 eggs
- 1 c. heavy cream
- 1/2 c. shredded Mozzarella cheese
- 1 onion, chopped
- Parmesan cheese
- salt and pepper
- Filling: mushrooms, bacon, broccoli, spinach, ham (whatever you like)
Directions

1Cook pie shells according to package directions.

2Mix eggs, heavy cream, salt and pepper; set aside.

3Brown onion, drain and put in pie shells.

4Add filling.

5Shake Parmesan cheese over filling.

6Add egg mixture.

7Add Mozzarella cheese.

8Bake at 450° for 15 minutes, then reduce temperature to 350° and bake 20 minutes more.
