  • 9-inch deep pie shells
  • 4 eggs
  • 1 c. heavy cream
  • 1/2 c. shredded Mozzarella cheese
  • 1 onion, chopped
  • Parmesan cheese
  • salt and pepper
  • Filling: mushrooms, bacon, broccoli, spinach, ham (whatever you like)

Directions

    Cook pie shells according to package directions.

    Mix eggs, heavy cream, salt and pepper; set aside.

    Brown onion, drain and put in pie shells.

    Add filling.

    Shake Parmesan cheese over filling.

    Add egg mixture.

    Add Mozzarella cheese.

    Bake at 450° for 15 minutes, then reduce temperature to 350° and bake 20 minutes more.
