  • 1 pie shell
  • 2 slices bacon
  • 2 eggs
  • 1 cup 1% low-fat milk
  • 14 cup chopped onion
  • 14 cup chopped sweet red pepper
  • 1 small tomatoes, chopped
  • 18 teaspoon pepper
  • 1 pinch salt
  • 14 teaspoon parsley
  • 1 cup shredded cheddar cheese

    Preheat oven to 350 degrees.

    Cook bacon until crisp and chop into small pieces.

    Sprinkle on the bottom of the pie shell.

    Whisk together eggs and milk.

    Add chopped vegetables, pepper and salt.
