- 1 pie shell
- 2 slices bacon
- 2 eggs
- 1 cup 1% low-fat milk
- 14 cup chopped onion
- 14 cup chopped sweet red pepper
- 1 small tomatoes, chopped
- 18 teaspoon pepper
- 1 pinch salt
- 14 teaspoon parsley
- 1 cup shredded cheddar cheese
Directions

1Preheat oven to 350 degrees.

2Cook bacon until crisp and chop into small pieces.

3Sprinkle on the bottom of the pie shell.

4Whisk together eggs and milk.

5Add chopped vegetables, pepper and salt.

7Add cheese to milk mixture and mix.

8Pour mixture into pie shell and sprinkle parsley over top.
