- 10 ounces frozen spinach
- 3 eggs (or liquid substitute)
- 34 cup mozzarella cheese
- 14 cup carrot (chopped or diced)
- 14 cup yellow pepper (chopped or diced)
Directions

1Heat oven to 350 degrees.

2Line 6 muffin tins with foil liners.

3Spray liners with cooking spray.

4Thaw spinach and squeeze out all excess liquid.

5Combine all ingredients in a medium bowl.

6Put equal amounts of veggie mixture into each liner.

7Bake for 20 minutes or until knife inserted comes out clean.

8Cups can be frozen in snack size bags and reheated - remove from foil liner before freezing.
