- 1 12 cups heavy whipping cream
- 12 cup sugar
- 8 egg yolks
- 1 12 lbs mascarpone cheese, softened
- 2 cups strong coffee, cooled
- 14 cup Amaretto
- 48 ladyfingers
- 12 cup unsweetened cocoa
- 1 semi-sweet chocolate baking square (to garnish)
Directions

1Whip the cream with 2 T sugar, in a chilled bowl until stiff.

2Set aside.

3Blend egg yolks with the remaining sugar until pale yellow.

4Fold mascarpone into egg mixture until thoroughly incorporated.

5Fold whip cream into egg mixture, gently but thoroughly.

6In a medium bowl combine coffee and Amaretto.

7Dip the lady fingers quickly into the coffee mixture.

8Layer into a 9 x 13 pan, covering the bottom with lady fingers.

9Pour 1/2 of the egg mixture over the lady fingers.

10Repeat for another layer.

11Sift cocoa over the top until evenly dispersed.

12Garnish with chocolate curls.

13Chill for at least one hour.

14Serve.
