- unbaked 9-inch pie shell
- 1 egg white
- 1/4 lb. bacon
- 1/2 c. diced Swiss cheese
- 2 c. milk or cream
- 1/4 tsp. salt
- 1/8 tsp. white pepper
- grating of nutmeg
- 1 tsp. chopped chives
Directions

1Preheat oven to 375°.

2Brush pie shell with egg white.

3Prick well.

4Chop bacon into 1-inch lengths.

5Fry and drain well.

6Scald milk to hasten cooking.

7Cool slightly.

8Beat together milk, eggs, spices and chives.

9Sprinkle bacon and cheese in bottom of pie shell.

10Pour custard mixture over bacon and cheese.

11Bake 35 to 40 minutes or until top is golden brown.
