- 1/4 c. butter or margarine
- 1/2 c. diced scallions
- 3/4 c. half and half
- 1/2 c. sour cream
- 6 medium cooked and diced potatoes
- 1 1/2 tsp. salt
- 1 1/2 tsp. white pepper
- 2 tsp. chopped parsley
Directions

1Cook and dice potatoes.

2Set aside.

3In large skillet saute butter and scallions until softened.

4Add half and half.

5Bring to a boil.

6Stir frequently, as not to burn.

7Add sour cream.

8Bring to a boil (approximately 1 minute).

9Reduce heat.

10Stir in remaining ingredients except parsley.

11Cook mixture until thickens, stirring frequently (approximately 1 to 3 minutes).

12Serve with parsley garnish.
