Quick Banana Bread

  • 1/3 c. oil
  • 1 1/2 c. mashed ripe bananas
  • 3 eggs
  • 1/2 tsp. vanilla extract
  • 2 1/3 c. Bisquick (regular or reduced fat)
  • 1 c. sugar
  • 1/2 c. chopped pecans

Directions

    Preheat oven to 350°.

    Grease and flour a 5 x 9-inch loaf pan. Combine oil, bananas, eggs, vanilla, Bisquick and sugar in mixer bowl.

    Mix well and fold in pecans.

    Pour into pan.

    Bake for 55 minutes or until toothpick inserted in center comes clean.

    Cool in pan 5 minutes.

    Remove to wire rack to cool completely.

    (I use 2 disposable tin loaf pans rather than one 5 x 9-inch pan and bake approximately 45 minutes.)
