Quick Blender Pea Soup

Ingredients
- 4 c. skim milk
- 2 c. frozen peas, thawed
- 4 tsp. flour
- 4 tsp. margarine
- 2 tsp. salt
- 2 Tbsp. fresh onion, grated
- dash of pepper
- 1/8 tsp. grated nutmeg (grate from a whole, fresh nutmeg for this amount)
Directions

1Combine in blender milk and peas, processing until smooth. Melt margarine; add flour and stir until smooth.

2Add to blender with salt, pepper and onion.

3Process again until smooth.

4Pour into saucepan and bring to a boil, stirring occasionally.

5Reduce heat and simmer until mixture thickens, stirring often to keep from sticking.

6Stir in nutmeg.

7Makes 8 servings.
