Quick Cabbage Saute

Ingredients
- 2 Tbsp. pine nuts
- 3 Tbsp. peanut oil or safflower
- 1 leek (white only), finely chopped
- 2 carrots, peeled and julienned
- 1/2 sweet pepper, seeded and julienned
- 1 medium cabbage, cored and finely shredded
- 1 tsp. chili paste with garlic
- 2 Tbsp. soy sauce
- 1/4 c. dry sherry (optional)
- salt and freshly ground pepper
Directions

1In large skillet, toast pine nuts over medium heat for 3 to 5 minutes.

2Shake pan constantly to avoid burning; remove and set aside.

3In same skillet, heat oil over medium heat.

4Saute leek until slightly softened, about 2 minutes.

5Add carrots and red peppers; saute about 3 more minutes.

6Add cabbage; saute until just wilted (approximately 3 minutes).

7Add chili paste, soy sauce, sherry, salt and pepper to taste.

8Stir to combine.

9Bring to boil for 1 minute.

10Add pine nuts.

11Serve immediately.
