  • 1 pound fettuccine fresh
  • 1 1/4 cups cream
  • 3 large eggs
  • 1 1/2 ounces grated Parmesan
  • 1 teaspoon dijon mustard
  • 5 ounces pancetta thickly sliced
  • 1/3 cup flat leaf parsley roughly chopped, plus extra for garnish
  • salad to serve, optional
  • crusty bread to serve, optional

Directions

    Cook pasta according to package instructions. Meanwhile, in a large bowl, whisk together the cream, eggs, parmesan and mustard. Season to taste. Drain pasta and return to pan. Toss cream mixture, pancetta and parsley with hot pasta. Serve topped with extra parsley and accompany with a salad and crusty bread, if desired.
