- 6 carrots, grated
- 2 Tbsp. water
- 1/4 c. frozen orange juice concentrate
Directions

1Cook carrots in a waterless pan, or with 2 tablespoons water in a heavy, nonstick frypan with a tight-fitting lid.

2After carrots come to a boil, turn heat down and simmer until tender (about 5 minutes).

3Stir in orange concentrate.

4Decorate with thin orange slices.

5Lightly toasted, slivered almonds also make a tasty garnish.

6Serves 6.
