Quick Chicken Casserole

- 3 chicken breasts, cut in half
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. Accent
- 3/4 c. self-rising pancake mix
- 1/2 c. peanut oil
- 1 c. instant rice
- 1 (10 oz.) can cream of chicken soup
- 3/4 c. half and half cream
Directions

1Wipe chicken breasts with paper towels.

2Sprinkle each half with a portion of the salt, pepper and Accent.

3Place the pancake mix in a paper sack, then coat each piece of chicken with mix by shaking up and down vigorously.

4Heat the oil in a suitable skillet; brown each piece of chicken on both sides.

5Cook the rice according to directions.

6Stir the soup and half and half cream into the cooked rice.

7Put soup and rice mixture into a buttered casserole, then put chicken on top.

8Bake at 350° for 35 minutes. Serves 6.
