- 3 lb. peeled crawfish tails
- 1/2 bunch chopped green onions
- 1 large onion, chopped
- 1 stalk celery, chopped
- 1/2 large bell pepper, chopped
- 2 tsp. chopped parsley
- 1 can Ro-Tel tomatoes
- garlic seasoning as desired
Directions

1Make a roux. In large pot, add onion, green onion, bell pepper and celery to roux. Stir until soft. Add 2 quarts water and Ro-Tel tomatoes. Simmer for 1 hour. Add crawfish, parsley and garlic, then simmer for 30 minutes. Serve over rice.
