- Olive Oil, As Needed
- 2 Red Onions, Sliced In Half Moons
- 3 teaspoons Curry Powder
- 400 grams Canned Tomatoes
- 400 grams Cooked Chickpeas
- Salt And Pepper, to taste
- Baby Spinach, To Serve
Directions

1Heat a little olive oil in a medium saucepan on a medium heat.

2Add onions, cover and cook until onion is soft but not browned, about 10 minutes, stirring occasionally.

3Add curry powder and cook for about 30 seconds.

4Add tomatoes and chickpeas.

5Simmer covered for 510 minutes or until everything is piping hot.

6Taste and season with salt, pepper and extra curry powder if needed.

7Serve on a bed of baby spinach.
