Quick & Easy Tangerine Cake

- 2 whole Tangerines
- 2 cups Self Raising Flour
- 2 cups Sugar
- 2 whole Eggs
- 1/2 cups Canola Oil
Directions

1Cut the tangerines in quarters and remove the pips, then place in the bowl of a food processor or blender and whiz to a pulp.

2Add the remaining ingredients and continue to whiz until well blended.

3Pour into a greased cake tin and cook for twenty minutes in a moderate oven (350), or until a toothpick inserted in the centre comes out clean.

4This cake is great alone, but is also good with orange or lemon buttercream icing.
