Quick & Easy Tangerine Cake

  • 2 whole Tangerines
  • 2 cups Self Raising Flour
  • 2 cups Sugar
  • 2 whole Eggs
  • 1/2 cups Canola Oil

Directions

    Cut the tangerines in quarters and remove the pips, then place in the bowl of a food processor or blender and whiz to a pulp.

    Add the remaining ingredients and continue to whiz until well blended.

    Pour into a greased cake tin and cook for twenty minutes in a moderate oven (350), or until a toothpick inserted in the centre comes out clean.

    This cake is great alone, but is also good with orange or lemon buttercream icing.
