- mayo
- cracker or bread crumbs
- grated Parmesan cheese
Directions

1Peel eggplant and slice 1/2-inch thick.

2Spread slices (both sides) with mayo.

3Dredge in mixture of crumbs and cheese on both sides.

4Bake in a single layer in an ungreased pan at 425° for 15 to 20 minutes until brown.

5Serve as is, or with your favorite sauce.
