  • 1 small cucumber, peeled, halved, seeded and chopped fine
  • 2 Tbsp. minced onion
  • 1 1/2 c. tomato juice
  • 2 garlic cloves, minced
  • 2 tsp. sugar
  • 1/4 c. minced fresh parsley
  • 4 c. tomato vegetable cocktail
