- 3 Tbsp. butter
- 1 1/2 lb. fresh scallops
- 1 lb. mushrooms, quartered
- 1 shallot, chopped
- 1 Tbsp. parsley, chopped
- 1 Tbsp. chives, chopped
- salt and pepper
- juice of 1 lemon
Directions

1Heat butter in large frying pan.

2Add scallops and season with pepper.

3Cover and cook 2 to 3 minutes over medium-high heat, turning once.

4Add mushrooms and shallot to pan; continue cooking covered for 1 minute.

5Add remaining ingredients; mix well.

6Serve immediately.
