Ingredients
- 3/4 cup raisins (or any combo mixed fruit)
- 1 cup boiling water
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 7 packets sugar substitute or 3 tablespoons sugar
- 1/2 teaspoon cinnamon (or to taste)
- 1/4 teaspoon salt
- 2 egg whites
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened applesauce
Directions

1Spray 9x5 inch loaf pan with non stick pan spray.

2Dust lightly with flour.

3Combine raisins with water.

4Set aside for 30 minutes.

5Preheat oven to 350 degrees F.

6Combine dry ingredients in a large bowl.

7Add raisins and liquid, egg, vanilla and unsweetened applesauce.

8Mix until just moistened.

9Pour into prepared pan.

10Bake 40 to 45 minutes or until golden brown and firm to touch.

11Let stand for 5 minutes.

12Cool on rack.

13Serve warm or slice and toast.
