Quick Potato Rolls

Ingredients

  • 3/4 c. warm milk
  • 1/2 c. mashed potatoes
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 1 pkg. yeast
  • 6 Tbsp. soft shortening
  • 2 to 2 1/4 c. sifted flour

Directions

    Mix together the milk and potatoes; add yeast.

    Stir until dissolved.

    Add dry ingredients and mix until easy to handle. Shape into desired shapes and let rise until doubled (45 to 60 minutes).

    Bake until golden brown at 400° for 15 to 20 minutes. Makes 1 1/2 dozen rolls.

    (Measure leftover mashed potatoes into 1 cup portions and freeze for later use in recipes.)
