Quick Potato Rolls

- 3/4 c. warm milk
- 1/2 c. mashed potatoes
- 2 Tbsp. sugar
- 1 tsp. salt
- 1 pkg. yeast
- 6 Tbsp. soft shortening
- 2 to 2 1/4 c. sifted flour
Directions

1Mix together the milk and potatoes; add yeast.

2Stir until dissolved.

3Add dry ingredients and mix until easy to handle. Shape into desired shapes and let rise until doubled (45 to 60 minutes).

4Bake until golden brown at 400° for 15 to 20 minutes. Makes 1 1/2 dozen rolls.

5(Measure leftover mashed potatoes into 1 cup portions and freeze for later use in recipes.)
