Quick Salmon Patties

- 1 can (16 oz.) pink salmon
- 1 egg
- 1/2 c. self-rising flour
- 1/3 c. minced onion
Directions

1Drain liquid off salmon; save.

2Combine salmon, egg, onion and flour.

3Add 2 tablespoons salmon liquid.

4Form into small patties and shallow fry in hot oil until golden brown (about 5 minutes). Serve with tartar sauce.

5Makes 4 to 6 servings.
