Quick Shrimp Curry

Ingredients

  • 1/2 c. chopped onion
  • 1 Tbsp. butter
  • 1 can cream of shrimp soup
  • 1 c. dairy sour cream
  • 1/2 tsp. curry powder
  • 1 c. cleaned, cooked or canned shrimp
  • 3 c. cooked rice

Directions

    Cook onion in butter until tender but not brown.

    Add soup; heat and stir until smooth.

    Stir in sour cream and curry powder. Add shrimp and heat.

    Sprinkle with paprika.

    Add a sprig of parsley.

    Serve over hot rice.

    Offer curry condiments:

    salted peanuts, chopped hard-cooked eggs, chutney and kumquat preserves. Makes 4 servings.
