Quick Shrimp Curry(Servings: 4)

  • 1/2 tsp. curry powder
  • 1/2 c. onions, chopped
  • 1 Tbsp. butter
  • 1 c. sour cream
  • 1 c. cooked shrimp
  • 1 can frozen condensed cream of shrimp soup
  • 1 c. raw rice
  • 1 dash lemon juice

Directions

    Cook rice; simmer the onions and curry powder in the butter in the top part of a double boiler until onions are tender, but not brown.

    Add the frozen soup; set pan over hot water and stir until smooth.

    Stir in the shrimp, sour cream and dash of lemon juice and heat well.

    Serve immediately over cooked rice or combine in a casserole and keep warm in the oven until time to serve.
