Quick Spanish Rice

- 1/2 c. chopped green pepper
- 1/2 c. chopped onion
- 1 (4 5/8 oz.) pkg. (1 1/3 c.) precooked rice
- 1/4 c. fat
- 1 beef bouillon cube
- 1 1/4 c. hot water
- 2 (8 oz.) cans (2 c.) seasoned tomato sauce
- 1 (12 oz.) can lunch meat, cut in thin strips
Directions

1Cook green pepper, onion and rice in hot fat, stirring constantly, until lightly browned.

2Dissolve bouillon cube in hot water; add to rice along with the tomato sauce and meat; mix. Bring quickly to a boil.

3Reduce heat and simmer uncovered 5 minutes or until rice is tender.

4Makes 5 servings.
