Quick Spanish Rice

  • 1/2 c. chopped green pepper
  • 1/2 c. chopped onion
  • 1 (4 5/8 oz.) pkg. (1 1/3 c.) precooked rice
  • 1/4 c. fat
  • 1 beef bouillon cube
  • 1 1/4 c. hot water
  • 2 (8 oz.) cans (2 c.) seasoned tomato sauce
  • 1 (12 oz.) can lunch meat, cut in thin strips

Directions

    Cook green pepper, onion and rice in hot fat, stirring constantly, until lightly browned.

    Dissolve bouillon cube in hot water; add to rice along with the tomato sauce and meat; mix. Bring quickly to a boil.

    Reduce heat and simmer uncovered 5 minutes or until rice is tender.

    Makes 5 servings.
