Quick Spinach Lasagna

  • 1 pkg. lasagna noodles
  • 2 c. grated Mozzarella cheese
  • 1/2 lb. Ricotta cheese
  • 1/2 lb. cottage cheese
  • 1 (8 oz.) pkg. frozen spinach, thawed and drained
  • 1 lb. ground beef or Italian sausage (optional)
  • 1 jar favorite spaghetti sauce
  • 1/2 tsp. Italian seasoning
  • salt and pepper
  • Parmesan cheese
  • 2 eggs
  • 1/4 c. chopped onion
  • cooking oil

Directions

    Saute the onions in cooking oil until tender.

    Combine Ricotta cheese, cottage cheese, eggs, spinach, Italian seasoning, salt, pepper, sauteed onion and 1/2 cup Parmesan cheese in bowl and set aside.

    If using meat, cook and drain.

    Cook the noodles to almost done.

    Don't cook all the way.

    Cook them until they're rubbery to avoid them falling apart.
