- 1 c. (about 2 oz. untrimmed) spinach leaves (1/2 c. chopped)
- 1 carrot (about 1/2 c. grated)
- 1 scallion
- 2 1/3 c. flour
- 4 Tbsp. grated Parmesan cheese
- 2 Tbsp. sugar
- 1 Tbsp. baking powder
- 3/4 tsp. salt
- 3/4 tsp. dried thyme
- 1/8 tsp. nutmeg
- 1 c. milk
- 1/4 c. oil
- 1 egg
- 2 Tbsp. sliced pimento
Directions

1Heat oven to 350°.

2Butter an 8 x 5-inch loaf pan.

3Chop the spinach.

4Grate the carrot.

5Chop the scallion.

6In a large bowl, combine flour, 2 tablespoons Parmesan, sugar, baking powder, salt, thyme and nutmeg.

7In a separate bowl, combine the milk, oil and egg.

8Stir the milk mixture, chopped vegetables and pimento into the flour mixture until all ingredients are just moistened.

9Spoon batter into the prepared pan.

10Sprinkle with the remaining 2 tablespoons Parmesan.

11Bake until a toothpick stuck into the center comes out clean, 55 to 60 minutes.

12Cool 10 minutes. Remove from the pan; cool completely.
