- 2 cups water
- 1 cup quinoa
- splash of fish sauce (1 tbsp)
- crushed ginger (1 tsp)
- garlic (1 tsp)
- seasame oil (1 tsp)
- onion
- green and red pepper
Directions

1Boil, cover, simmer for 20 minutes. It's done when the liquid is absorbed and the grains open up.

2Dice onion, red and green pepper (about 1/2 cup). When the quinoa is almost done, dump the veggies on top and let them steam to soften just a bit. Or you can add at the end and let it sit for 5 minutes. Stir and serve. A little bit of shredded hard cheese (asiago) is a nice touch.
