Quinoa & Pine Nut Salad

- 2 cups Cooked Quinoa (I used multi colored)
- 3 tablespoons Raw Pine Nuts
- 2 Chopped Large Tomatoes (or 8 cherry tomatoes, halved)
- 1 Diced Avocado
- 2-3 tablespoons Olive Oil
Directions

1Place cooked Quinoa in the fridge to cool.

2Heat a small skillet on medium high heat.

3Add the Pine Nuts and cook until golden brown (about 2 minutes), making sure to stir often)

4Put chopped Tomatoes, Avocado, and Olive Oil in a medium size bowl.

5Add Pine Nuts and Quinoa and season with Salt and Pepper. Enjoy!
