- 1 c. quinoa (grain)
- 2 c. water for boiling
- 3 Tbsp. pine nuts
- 6 to 8 dried apricots, diced
- 1/4 c. raisins, softened in hot water
- 2 Tbsp. chives
- vinaigrette dressing
Directions

1Rinse quinoa.

2Soak in boiling water for about 10 to 15 minutes or until soft.

3Toast pine nuts in pan.

4Mix all ingredients together with vinaigrette to taste.
