Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 3/4 cups Red Onion, Diced
  • 1/2 cups Red Pepper, Diced
  • 1 cup Cilantro, Chopped
  • 2 whole Green Onions, Chopped
  • 1 cup Feta Cheese, Crumbled
  • 1 whole Lemon, Zest And Juice
  • 2 Tablespoons Extra Virgin Olive Oil
  • 2 pinches Each Of Salt And Pepper

Directions

    In a pot, add the quinoa and water. Bring to a boil over high heat for 3 minutes. Turn off the heat and place a cover on the pot and let the quinoa absorb all the water.

    After the quinoa has cooked and cooled, add it to a large bowl along with the chopped red onion, red pepper, cilantro, green onions and feta. Mix together.

    Add the lemon zest and juice, olive oil and season with salt and pepper. Mix together and serve cool.
