- 1/2 cup quinoa
- 1 stick unsalted butter
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon fine sea salt
Directions

1Soak the quinoa in water for 10 minutes, then drain.

2Beat together the butter and sugar using with an electric mixer until combined.

3Add the egg and vanilla, then beat to combine.

4Stir together the flour, baking powder and salt, then beat into the butter mixture just until combined.

5Stir in the quinoa.

6Wrap the dough in plastic wrap, flattening into a disk, then chill 30 minutes.

7Preheat the oven to 350F.

8Roll the dough out to 1/4-inch thick on a lightly-floured surface, then cut 1 1/2-inch rounds or squares, and transfer them to two baking sheets.

9Bake the cookies until they are puffed and golden on the bottom, 10 to 12 minutes.

10Let cool then serve.
