Quinoa Soup With Corn

- 14 12 ounces canned vegetable broth
- 12 cup quinoa, rinsed
- 2 garlic cloves, minced
- 14 teaspoon cayenne
- 1 cup corn kernel (fresh or frozen)
- 1 12 tablespoons chopped cilantro or 1 12 tablespoons parsley
- 1 tablespoon fresh lime juice
Directions

1In a small soup pot, combine the broth, quinoa, garlic, cayenne, and 1 3/4 cups water.

2Bring to a boil, reduce the heat to medium, and cook 10 minutes.

3Add the corn kernels and cook until hot and tender, about 3 minutes.

4Stir in the cilantro and cook 1 minute.

5Remove from the heat and stir in the lime juice.

6Serve hot or cold.
