- 1 cup Quinoa
- 2 cup chicken broth
- bunch spinach
- 1/2 box cherry tomatoes, diced in half
- 1 large sweet Onion
- 8 clove garlic cloves
- 1 box white mushrooms, diced
- 2 tbsp fresh lemon juice
- 1/2 stick unsalted butter
Directions

1Start with cooking quinoa, combine 1 cup of quinoa with 2 cups of chicken broth.

2Once starting to boil, turn down to a simmer and cover.

3Cook for twenty minutes.

4In a large skillet, medium heat with unsalted butter cook down the onion and garlic.

5Quarter cherry tomatoes and toss in.

6Squeeze lemon juice.

7Cook down til starting to wilt.

8Next, add diced mushrooms with the cooked quinoa with spinach.

9Cook together.. have the ingredients marinade on low.
